The Meat Processing Facility
Our USDA slaughterhouse and meat processing facility is located in Canby, Oregon—one of the very last small-scale meat processors in the state. We process locally raised beef, pork and lamb for our own Revel Meat Co. label as well as other small-scale farmers whose meat is not sold through our brand.
All of the beef, pork and lamb sold through our butcher shop and wholesale accounts is processed in our facility. We also process meat for other local farmers as part of our mission to support small-scale ranchers in our community and the diversification of our local food system.
Values & Certifications
Our plant is GAP4 Certified, Organic certified by Oregon Tilth and Animal Welfare Approved—and we implement a robust Systematic Approach to the Humane Handling of Livestock to ensure our animals are always treated with the utmost care and respect. These certifications enable us to process meat from a wide range of farmers including those who work within these labels.
Maintaining the legacy of Marks Meat
Our facility still operates under the name Marks Meat Inc.—a nod to its original owners and its name since it opened back in 1963. Floyd Marks and his family ran Marks Meat for more than fifty years before we bought the business from them in 2017. They’ve always been a stalwart of our regional food economy and we hope to carry on that legacy by ensuring that local ranchers will always have the means to send their meat to market.
Reviving local meat processing
Small-scale processing facilities have nearly disappeared in Oregon and across the nation—forcing ranchers to ship their animals long distances for processing and dissolving our regional food systems as a result. The rise of supermarkets and the commodity meat industry have steadily shuttered small meat processors and butcher shops over the last sixty years and made it much more difficult for local farmers to process and sell their meat.
Oregon alone has lost nearly 1,000 meat processors since the mid-20th century, and Marks Meat is now one of the only remaining small-scale slaughterhouses in the state. As a USDA-certified processing facility, we aim to support local ranchers by helping them gain greater market viability and increase consumer access to high-quality locally raised meat.
